Clayton Chapman

A distinguished graduate of the Illinois Institute of Art-Chicago, Chef Clayton's culinary brilliance has earned him accolades on both local and national stages. He's been crowned 'Best Chef in Omaha' by Omaha Magazine for an unprecedented seven consecutive years, celebrated for the 'Most Loved Meal of 2017' by Omaha World Herald, and recognized by People Magazine as the creator behind Nebraska's 'Favorite Restaurant'. In 2018, he further solidified his reputation by securing first place in the prestigious Good Food Awards.

Beyond his tangible accolades, Clayton's digital footprint is substantial. His YouTube channel resonates with food enthusiasts around the globe, amassing over 460,000 views and drawing a dedicated following of over 6,120 subscribers.

Beginning his culinary adventure in Nebraska at just 15, Clayton has consistently showcased his passion and prowess. Among his standout achievements is The Grey Plume, launched in 2010, recognized as 'The Greenest Restaurant in America'. Five nominations by the illustrious James Beard Foundation and features in prestigious outlets like Bon Appétit and The New York Times underscore his commitment to the Midwest's farm-to-table ethos.

Beyond these accomplishments, Clayton's entrepreneurial spirit thrives. In collaboration with Heather Smith, he's embarked on two ambitious ventures: a hospitality consulting firm focused on the Midwest's evolving dining scene, and a groundbreaking app/tech start-up, 'On The Fly'. This innovative platform aims to revolutionize the restaurant industry by seamlessly connecting workers to shifts in real-time.

With a Level II Certification from The Guild of Master Sommeliers, Heather stands out as a respected figure in the world of wine and dining. With more than ten years managing upscale dining establishments, her proficiency has garnered attention from renowned publications such as Wine Enthusiast Magazine, NET Television, Nation’s Restaurant News, and Omaha Magazine.

Heather began her culinary journey in the Midwest, quickly rising through the ranks of its most esteemed restaurants. Eager to expand her expertise, she ventured to the east coast, working in iconic dining venues in New York and Connecticut. However, the heartstrings of home soon drew her back to Omaha.

Beyond her expertise in wine and its delightful dance with food, Heather is a dynamic entrepreneur. Together with Clayton Chapman, they've launched a cutting-edge hospitality consulting firm in the Midwest. They also co-founded an innovative tech start-up: "On The Fly," a gig-economy platform tailored for the restaurant industry, seamlessly connecting workers with shifts.
