Clayton Chapman

Clayton is a five-time James Beard nominee and nationally recognized chef celebrated for his role in shaping the Midwest’s farm-to-table movement. In 2010, he founded The Great Plume, the greenest restaurant in America, which he ran for a decade. His innovative, locally driven approach has been applauded by TIME Magazine, Food & Wine, Bon Appétit, The New York Times, and more.

With 25 years of experience in every role—from chef to owner—Clayton now consults with investment firms and restaurateurs to design profitable, high-quality dining concepts. At Noble Hospitality, Clayton brings this expertise to event catering, ensuring each menu is handcrafted, consciously sourced, and tailored to diverse dietary preferences.


Heather Smith

Heather blends a decade of fine-dining experience as a certified sommelier and general manager with her passion for mindfulness and energy work. Her approach to wine pairing is both artful and intentional, teaching clients how to fully experience wine through its craftsmanship, energy, and pairing with food. Heather believes dining should be a journey of connection and presence, where every sip and bite are savored with intention.

At Noble Hospitality, Heather ensures every event is flawlessly executed, balancing the elegance of fine dining with an ease that allows clients to fully enjoy the moment. Her attention to detail and commitment to high standards create unforgettable experiences for every occasion.

As a blended family of six, we cherish our time together—playing games, exploring the outdoors, and sharing meals. With two young boys (ages three and four) and two older children (11 and 15), we embrace individuality and celebrate everyone’s unique preferences, from vegetarian to paleo and everything in between.
